Chicken Pot Pie

I want to share a secret with you. I have the most embarrassingly easy and unbelievably delicious recipe for chicken pot pie. 


Ingredients:

1 rotisserie chicken (white meat), if you like a meatier pie, add the white meat of a second chicken or the dark meat of the first which will give a nice depth to the pie

2 cans of cream of potato soup

2 cans of mixed vegetables

1 cup of milk (anything but skim - you need the viscosity)

pinch of salt

pinch of pepper

2 deep dish pie crusts (my favorite is Pillsbury)


Preheat your oven to 375.


Remove the desired meat off of the rotisserie chicken. Mix all of the ingredients minus the pie crusts into a large bowl. Pour all of the ingredients into on of the deep dish pie crusts. Remove the other pie crust from the pan and lay it on top of your chicken pot pie mixture. Press the sides of the two pie crusts together sealing all the yumminess inside.


Cook for about 35-45 minutes or until the crust is golden.
