I am a lover of things that crunch. I am also a lover of sweet and salty. And I am a lover of things that make my taste buds happy and my body healthy. If you also love these things, please try this paleo approved crunchy, sweet, salty, healthy and yummy granola.


Ingredients:

1 cup sliced almonds

1 cup crushed pecans

1 cup crushed walnuts

1 cup crushed cashews

1 cup shredded coconut

1/2 cup shredded coconut

1/2 cup sunflower seeds

1/2 cup pumpkin seeds

1/4 cup dried cranberries

1/4 cup dried blueberries

1/4 cup chopped dates

1/4 cup chopped apricots

2 tsp cinnamon

1 tsp ginger

1 tsp nutmeg

1/2 tsp salt

2 tsp vanilla extract

1 1/2 cup honey


Directions:

Preheat the oven to 275. Line a baking sheet with parchment paper. Combine everything into a large bowl EXCEPT the vanilla and honey.  In a smaller bowl, mix the honey and vanilla extract. Pour the honey mixture into the larger bowl. Stir and pour granola onto the parchment paper lined baking sheet. Bake in the oven for 70-75 minutes. Let cool and enjoy. I have to divide my granola up into small baggies so that I do not eat all of it in one sitting ;)
