Kale and Quinoa Salad

If you are looking for something yummy and healthy after the holiday season, I've got a great salad recipe.


Ingredients:

3 cups baby kale

3 cups spinach

1 cup cooked quinoa

1/2 cup trip cheese blend (parmesan, romano and asiago)

1/2 cup of halved seedless purple grapes

1/4 cup shelled sunflower seeds


Directions:

Mix all ingredients together and enjoy!


​If you are looking for a good dressing to go with this salad and want something store bought, I usually tend toward a champaign vinaigrette. But I love a homemade dressing! I do equal parts honey, olive oil and lemon juice.
