No Bake Energy Balls

This is one of my absolute favorite go to snacks. It's healthy and packed with good ingredients and lots of protein. And best of all, my kids devour them.


Ingredients:

1 cup dry old fashioned oats

1 cup unsweetened coconut flakes

1 cup almond butter

1/2 cup honey

1/2 cup coarsely ground flaxseed

1 tablespoon chia seeds

1 teaspoon vanilla extract

1 cup of either chocolate chips or raisins


Directions:

Stir all the ingredients together in a large bowl until well mixed. Place the bowl in the refrigerator for 45-60 minutes to firm. Remove the ingredient bowl from the refrigerator, hand roll the mixture into half-dollar size balls. Put the energy balls in an air tight container and place in the refrigerator. Eat as an on the go snack and enjoy!
