Smoothie Bowls are my newest obsession! I love them! And what I love more than the satisfyingly sweet taste is that my children love them just as much as I do. But I know something they don't know. I have a little secret. These bowls are packed with all kinds of good-for-you yummies like kale and spinach, strawberries and blueberries, raspberries and bananas. And that's just the base. The toppings are up to your imagination. I love coconut and slices almonds. My picky eater James prefers whipped cream and chocolate syrup. But why wouldn't he when I tell him he's eating a "smoothie sorbet"?!


Ingredients:

1 cup of kale

1 cup of spinach

1 cup of coconut milk or almond milk

1 whole frozen banana

2 cups of frozen berries


Topping Suggestions:

sliced almonds

chia seeds

shredded coconut

fresh strawberries

fresh banana

fresh blueberries

chocolate chips

gummy bears (Willow's favorite)


Directions:

Put the kale, spinach and milk in a blender. Process the vegetables to an almost liquid state. Add in the banana and berries. Blend at a high intensity so that the mixture takes on an ice cream like consistency. You will have to scrape down the sides to get things going. Empty all of the thick smoothie into a bowl, top with whatever your heart desires and enjoy!
