Hulk Balls

Yes you read that correctly - Hulk Balls. It is what my sweet son has named this delicious and sneaky healthy snack.

I told y'all I was going to see if I could find a way to hide some kale and spinach in one of my energy bites recipe and I have! 

James thinks that he grows bigger muscles and lift the house with each Hulk Ball he ingests. Let me know if your sons feel the same way...


1 cup dry old fashioned oats

1 cup unsweetened coconut flakes

1 cup almond butter

1/2 cup honey

1/2 cup coarsely ground flaxseed

1 tablespoon chia seeds

1 teaspoon vanilla extract

1 cup of kale and 1 cup of spinach processed in a food processor


Place kale and spinach in a food processor and pulse until ground. Remove from the food processor and place onto a generous portion of paper towels. Pat dry, enough to remove any excess water. Stir all the ingredients together in a large bowl until well mixed. Place the bowl in the refrigerator for 45-60 minutes to firm. Remove the ingredient bowl from the refrigerator, hand roll the mixture into half-dollar size balls. Put the Hulk Balls (I laugh every time I type that - how old am I?) in an air tight container and place in the refrigerator. Eat and see how much stronger your muscles become ;)!
