No Bake Carrot Cake Bites

With four little ones, five years of age and under, including one of those being a newborn, I love anything that I can grab and eat on the go. The post before this one was for no bake energy balls. Well, I've manipulated that recipe a bit and am sharing my no bake carrot cake bites or bunny bites as my kids call them (they think they turn into rabbits when they eat them). I needed to find a way to get carrots in my picky eating son. Maybe the post after this will be a no bake kale/spinach/broccoli bite ;)


1 cup of old fashioned oats

1 cup coarsely ground flaxseed

3/4 cup of honey

1/2 cup sunflower butter

1/2 cup shredded carrots (I start with whole ones and shred them in the food processor)

1/2 cup chopped pecans

5 pitted dates

1 teaspoon cinnamon

1/2 teaspoon vanilla extract

1/2 teaspoon of nutmeg


If you haven’t already, shred 1/2 cups worth of carrots in the food processor. Add all the rest of the ingredients to the food processor. Pulse together until the mixture is blended enough to stick together. Place mixture in the refrigerator for 30 minutes. Remove from the refrigerator and roll into half-dollar size balls. Place in an air tight container and keep in the refrigerator. Enjoy as a healthy snack. For an extra added bite of sweet, top the carrot cake bite with a sweep of cream cheese.
